There were many sessions at PETE&C for Podcasting. A simple internet search will also provide many tutorials for creating podcasts.
Personally my two essential tools are for recording (Audacity + LAME to convert to MP3) and publishing (PodBean). Both of these are free and easy to use.
Moodle gives you a couple options for utilizing audio:
Upload the audio file directly to Moodle
Some students have trouble listening at home if their computer security settings blocks pop-ups or auto-downloads.

Embed a more visual podcast (example below from Glogster Edu)
